Kuku wa kupaka - Chicken in coconut sauce

Serves 6-8 people

Ingredients
3-lbs. chicken cut into 8-10 pieces
1 onion finely chopped
270ml Ukuva iAfrica Zulu BBQ/cooking sauce
2 tsp. Ukuva iAfrica Tembo Smoky Garlic sauce
3 tsp Ukuva iAfrica Zulu Fire Sauce chilli sauce
˝ tsp. turmeric
1 tbs. Oil
2 cups coconut milk
Juice of 1 lemon
Coriander chopped to garnish
Ukuva iAfrica Khoisan Seaweed Salt to taste
Method
1.Marinade the chicken pieces in Ukuva iAfrica Tembo Smoky Garlic sauce, Ukuva iAfrica Zulu Fire chilli sauce, lemon juice and Ukuva iAfrica Khoisan Seaweed Salt and leave for 2-3 hours.
2.Sauté the finely chopped onion in the oil and add the coconut milk and stir all the time to make thick gravy on a low heat. Keep aside.
3.Roast the chicken pieces on charcoal or in an oven for 10-15 minutes until cooked.
4.Place the chicken pieces in a dish and pour the thick coconut sauce over the roasted chicken and put the dish in the oven for 10 minutes, basting the chicken with the gravy from time to time.
5.Garnish with chopped coriander and serve with coconut rice, sesame bread, mandazi, or mkate mimina.
