Galinha a Zulu - Zulu chicken

Serves 2 people

Ingredients
1 chicken of approximately 1,3kg (2 ½ lb.)
Ukuva iAfrica Khoisan Seaweed Salt to taste
Ukuva iAfrica Madagascar Garlic Pepper
200g (7oz/200ml/ ½ cup) butter
2 tbsp Ukuva iAfrica Zulu Fire Sauce chilli sauce
20ml (4t) lemon juice
4 tbsp Ukuva iAfrica Simba Smoky Garlic sauce
5ml (4t) paprika
20ml (4t) olive oil
Sauce
20g (1oz/20ml/4t) butter
10ml (2t) olive oil
2 tbsp Ukuva iAfrica Simba Smoky Garlic sauce
Ground Ukuva iAfrica Zulu Fire Spice to taste
Juice of 1 lemon
15ml (1t) chopped parsley
Method
1. Clean chicken, cut through back and flatten. Remove the carcass. Slit through the thick parts.
2. Mix the rest of ingredients to a paste. Rub it over the inside and outside of the chicken.
3. Marinate the chicken for 2 hours, then grill or bbq, basting and turning it frequently.
4.SAUCE: Fry Ukuva iAfrica Simba Smoky Garlic in butter and olive oil. Add rest of ingredients.
5.Pour sauce over chicken and serve with rice and vegetables.
