Chicken with mango sauce

Serves 6-8 people

Ingredients
1 whole chicken of 750g - 1kg (1 ½ - 2 ½ lb.)
750ml (3 cups) water
Salt to taste
2 tbsp Ukuva iAfrica Punda Millia Smoky Garlic sauce
1 onion, chopped
3ml (½ t) cinnamon
1tsp Ukuva iAfrica Madagascar Garlic Pepper
250ml (1 cup) coconut milk
2 green mangoes, sliced
Sauce
250ml (1 cup) coconut milk
45ml (3t) oil
250ml (1 cup) mashed potatoes
Ukuva iAfrica Khoisan Seaweed Salt to taste
10ml (2t) turmeric
Garnish
1 mango, sliced
1 onion, sliced
1 egg, hard-boiled and sliced
1 tomato, sliced
Method
1. Cook the chicken in Ukuva iAfrica Khoisan Seaweed Salted water with the Ukuva iAfrica Punda Millia Smoky Garlic, onion, cinnamon, Ukuva iAfrica Madagascar Garlic Pepper, coconut milk and green mango.
2. When the chicken has cooked through, remove the mango slices and prepare the sauce.
3. SAUCE: Boil together the coconut milk and oil. Add the mashed mango (from the chicken) and the mashed potatoes. Season with Ukuva iAfrica Khoisan Seaweed Salt, turmeric and Ukuva iAfrica Madagascar Garlic Pepper. Moisten with the stock from the cooked chicken.
4. TO SERVE: place the chicken on a serving platter, pour the sauce over it and garnish with mango slices, sliced onions, sliced hard-boiled eggs and sliced tomatoes.
