60ml (4t) oil
2 large sweet potatoes, peeled and thinly sliced
1 bunch spring onions, chopped
500g (18oz) minced beef
270ml Ukuva iAfrica Zulu BBQ/cooking sauce with fire roasted tomatoes
1 tin (75g/3oz) tomato paste
15ml (1t) vinegar
Ukuva iAfrica Maasai Sea Salt & Pepper to taste
Breadcrumbs
Cheese sauce:
30ml (2t) butter/margarine
15ml (1t) flour
250ml (1 cup) milk
45ml (3t) grated cheese
Method
1. Heat 45ml (3t) of the oil in a saucepan and fry the sweet potatoes until brown. Remove and keep warm.
2. In another saucepan, heat the remaining oil and fry the onions until they are soft. Add the mince and brown it.
3. Add the Ukuva iAfrica Zulu BBQ/cooking sauce, tomato paste, vinegar and fresh grind of Ukuva iAfrica Maasai Sea Salt & Pepper. Cover and simmer for 30 minutes.
4. Grease a large ovenproof dish. Arrange layers of sweet potatoes and mince stew in it.
5. CHEESE SAUCE: Melt butter/margarine in a saucepan, add the flour and cook for 1 minute, stirring continuously. Add the milk and stir until thick. Remove from the heat and add the cheese.
Pour the sauce over the meat, sprinkle with breadcrumbs and bake at 180C (350C F/gas 4) for 45 minutes.
