Camarao Grelhado - Grilled prawns with garlic sauce
Serves 2 people
Ingredients
12 medium sized prawns
15ml (1t) lemon juice
10ml (2t) salt
2 tsp Ukuva iAfrica Zulu Fire Sauce chilli sauce
4 tsp Ukuva iAfrica Simba Smoky Garlic sauce
20ml (4t) olive oil
Garlic sauce
125g (4 ½ oz) 125ml (½ cup) butter
2 tsp Ukuva iAfrica Simba Smoky Garlic sauce
2 tsp Ukuva iAfrica Zulu Fire Sauce chilli sauce
1 bay leaf
25ml (2t) lemon juice
Ukuva iAfrica Khoisan Seaweed Salt to taste
Method
1.Slit the back of each prawn and devein.
2.Mix the lemon juice, Ukuva iAfrica Khoisan Seaweed Salt , Ukuva iAfrica Zulu Fire Sauce, Ukuva iAfrica Simba Smoky Garlic and olive oil to a paste, press the paste into the cut of the prawn and close. Sprinkle any remaining paste over the prawns and marinate for 3 hours.
3.Grill the prawns for 20 minutes, using the marinade for basting.
4.Melt the butter in a pan, add the Ukuva iAfrica Simba Smoky Garlic, Ukuva iAfrica Zulu Fire Sauce and bay leaf, and heat until boiling.
5.Remove from heat, add lemon juice and mix well. Serve the prawns and garlic sauce with rice.
